Nicolette Hale’s Saint Lucia Experience

One word. Paradise! My husband (so weird saying that) and I chose St. Lucia for our honeymoon because it’s a quicker flight from our home state of Texas compared to other tropical destinations we considered. And are we happy we did! Upon arrival at Sugar Beach, we were immediately greeted with what would become my drink of the week, their signature coconut rum cocktail. It was heaven in my mouth. Made with rum, coconut milk, vanilla, cinnamon and nutmeg, it was pure deliciousness. We were then escorted to our villa via tuk tuk where we met with our butler. We hardly required anything from him, but it was a nice touch. The villa was absolutely amazing. It felt very private with the stairway entrance and all of the nature surrounding it. And the view… WOW! We weren’t able to see much of the ocean but that’s not to say it wasn’t still amazing. We were nestled into the jungle with a view of one of the beautiful Pitons and, wait for it, an outdoor shower. We probably used the outdoor shower more than the equally amazing, oversized indoor shower. For 7 days, we mostly vegged out.
The resort was so amazing that we couldn’t bring ourselves to venture out past the beach for most of our honeymoon. The food was amazing. We went to Bayside for the beach BBQ one night and had all-you-can-eat tastiness. My husband and I are sushi lovers and enjoyed Cane Bar so much that we ate there twice. At the beach, along with my coconut rum drink concoction, we ate ceviche, pizzettas, spring rolls, chicken skewers, and basically everything else on the menu. It was all pretty light and delicious.
If you stay at Sugar Beach, you can’t pass up the Great Room for dinner. It was the resort’s more formal restaurant and it was nice to dress up for an evening. After enjoying the resort amenities for a few days, we spent a day sailing on a beautiful 46-foot catamaran that we booked through Endless Summer Cruises. It picked us up at the Sugar Beach dock and took us to a few spots including Marigot Bay and The Landings.
After a quick snorkeling stop, we had lunch prepared by the captain. Lunch consisted of a salad, some sort of tasty pasta and rice dishes, and shrimp kebobs and mahi mahi from the grill. It was during lunch that I was introduced to Baron West Indian hot sauce. I loved it so much that I bought a few at the airport gift shop to give as gifts. Later during our stay we decided we had to spend some time at the resort’s Rainforest Spa. We chose the 50-minute couples massage that ended with 20 minutes of soaking in the Watsu pool attached to our thatched-roof hut where the massages took place. For only $5, I added the chocolate mint rub, which was well worth it. We ended our trip with a planned private dinner on the beach.
Sadly, it rained most of that day which prevented the staff from being able to set up for a beach dinner but the back-up plan did not disappoint. Instead, they set us up in a hut between the main reception building and the pool. It was still very intimate and romantic feeling. The meal also didn’t disappoint. My husband sat down with the chef the day before and together they customized a menu for he two of us. We started off with a tuna tataki dish for him and beef tataki for me followed by a lobster bisque and a shrimp dish. For the main course I had scallop risotto (my favorite) and rack of lamb (his favorite).
Rounding out the meal we ate a delicious banana dessert with vanilla bean ice cream and a chocolate mousse with mango ice cream. I’m glad we chose to do our private dinner on our final night, as it was the perfect ending to a flawless honeymoon.
